Alpha-amylase is a hydrolase responsible for mobilizing starch into metabolizable sugars. This process provides energy for root and bud growth and is crucial in the germination of grain seeds. These enzymes are encoded by a multi-gene family, and even though other amylases are involved in the process of starch breakdown, the contribution of alpha-amylase is a prerequisite for this process to start.
